Lottie's Honey Cake

“Lottie keeps bees behind the flower shop. This cake is how she says thank you.”

You'll need

• 3 cups flour
• 1 tsp baking soda
• 2 tsp baking powder
• 1 tsp cinnamon
• 1 cup honey
• 1 cup sugar
• 1 cup oil
• 3 eggs
• 1 cup warm coffee or tea
• ½ tsp salt

How to make it

1. Heat the oven to 350°F. Grease and flour a Bundt pan well (honey cakes like to stick).
2. Whisk the dry ingredients together.
3. Beat the honey, sugar, oil and eggs, then stir in the coffee.
4. Fold in the dry mix. Bake 55–65 minutes until a toothpick comes out clean. Cool 15 minutes before turning out.
